A quick look at oyster mushroom production at the end of 2020. We grow about ten different varieties of oyster mushrooms. We distinguish them mainly by their colors: gray, blue, yellow, white, beige, pink, and brown.
Some varieties of oyster mushrooms are better suited to warm temperatures, such as yellow or pink oyster mushrooms. In winter, we mainly grow gray oyster mushrooms: the oyster-shaped variety.
We sometimes harvest oyster mushrooms native to the region. After conducting laboratory screening, we test them in cultivation and examine various parameters such as incubation and fruiting times, the quality of the harvests obtained, the number of harvest substrate block, disease resistance, and so on. Based on these factors, we select the varieties best suited to our production methods.
