Rye is one of the best grains for producing grain mycelium: it resists bursting during cooking and has an optimal balance of sugars and carbon-to-nitrogen ratios.

To produce grain-based mycelium, rye grains are typically first soaked, then boiled, and finally sterilized in bags or jars.
