We grow the mushrooms ourselves, in Belgium, on a 100% organic substrate composed of beech sawdust and cereals from the region. We then dehydrate them in our dryers at low temperatures so as to best preserve all their qualities.
An interesting mushroom both in terms of its medicinal virtues and its flavors.
Dried mushrooms often have a more pronounced aroma than fresh mushrooms. They are perfect for preparing stuffings, soups, broths, pastas, risotto, gratins, terrines and pâtés, and for flavoring sauces, cooking meats, vegetables and fish.

Use
- Rehydrate for at least 15 minutes in hot water, and keep the water for cooking or flavoring a sauce;
- Add directly to cooking other vegetables, sauces, risotto, etc.
- Medicinal extraction: water and/or ethanol.

Note : Raw or undercooked shiitake may cause hives-like reactions in a small percentage of the population. We recommend always cooking shiitake well at >100°C. for at least 15 minutes to avoid these inconveniences.

The vast majority of food supplements and other mushroom-based products available on the market use mushrooms imported from China, which sometimes poses problems in terms of traceability on production methods.
At Mycosphere, we control the entire production chain of our products, from spores to mushroom harvesting, drying and packaging .
We cultivate them on a 100% organic substrate that we produce from beech wood and selected organic cereals from our region.
The shiitake mycelium grows on a substrate that we manufacture to measure based on beech sawdust and organic cereals from our region. This substrate is first pasteurized to eliminate possible contaminants before being mixed with selected shiitake mycelium in our laboratory.
Its cultivation requires time and patience: it takes 10 to 12 weeks between the reproduction of the mycelia and the harvest of the mushrooms. We control the humidity and air renewal in our cultivation rooms to guarantee maximum development and quality of the mushrooms.
We then practice slow drying at low temperatures (<42°C.) in order to best preserve all their qualities.
