We grow our mushrooms in Belgium using a 100% organic substrate made from beech sawdust and locally sourced grains. Once harvested, they are gently dried in our low-temperature dryers to preserve all their qualities.
Dried mushrooms develop rich, intense flavors that are perfect for enhancing your dishes. They are ideal for a wide variety of recipes: stuffings, soups, broths, pasta, risottos, gratins, terrines, and pâtés, as well as for adding flavor to sauces, meats, vegetables, and fish.

Usage

- Soak for at least 15 minutes in a small amount of hot water, and save the water for cooking or to flavor a sauce;
- Add directly to other vegetables, sauces, risotto, etc., while cooking.
- Medicinal extraction: water and/or ethanol.
30g dried = 300g fresh = Serves 2–3 people.
Note : Raw or undercooked shiitake mushrooms may cause hive-like reactions in a small percentage of the population. We recommend always cooking shiitake mushrooms thoroughly at >100°C for at least 20 minutes to avoid these issues.

The vast majority of dietary supplements and other mushroom-based products available on the market use mushrooms imported from China, which can sometimes pose challenges in terms of tracing production methods.

AtMycosphère, we manage the entire production process for our products, from spores to harvest , drying, and packaging.
We grow them on a100% organic growing mediumthatwe produce using beech wood and select organic grains sourced from our region.
The shiitake mycelium grows on a custom-made substrate composed of beech sawdust and organic grains sourced from our region. This substrate is first pasteurized to eliminate any contaminants before being mixed with the selected shiitake mycelium in our laboratory.
Growing mushrooms requires time and patience: it takes 10 to 12 weeks from the time the mycelium is cultivated until harvest . We carefully monitor the humidity and air circulation in our growing rooms to ensure optimal growth and the highest quality mushrooms.
