Lion's Mane mushrooms (Hericium erinaceus, also known as lion’s mane, white pom-poms, lion’s mane, or yamabushiitake) offer unique flavors reminiscent of seafood and coconut, with a texture similar to meat. They are easy to prepare in slices and can be sautéed like most other mushrooms.

These mushrooms, which are related to sheep’s foot mushrooms, producehydnes (small white spines) when they reach maturity. We harvest them before the hydnes exceed 5 mm in length to preserve their flavor and extend their shelf life. This rare and protected variety cannot be harvested in the wild.

The incubation period is short, about 10 days, with fruiting about two weeks before the first harvest. Grown primarily onsawdust, they adapt to a wide range of temperatures. Although they prefer indoor cultivation, some growers also cultivate them outdoors.

🌱 Growing conditions

Lion's Mane mushrooms can grow year-round at temperatures ranging from 10 to 25°C. To encourage fruiting, avoid drafts and temperature fluctuations. They thrive in high humidity but cannot tolerate direct moisture.

 

🛠️ Growing media

These mushrooms are typically grown on a substrate made from enriched sawdust that has been pasteurized or sterilized. Pasteurized straw and other lignocellulosic materials can also be used as alternatives.

We recommend our ready-to-use growing medium, which is particularly well-suited for wood-decaying fungi.

📈 Productivity

The fruiting bodies form hairy balls ranging in size from a golf ball to a large tennis ball, depending on the size of the substrate.

Yield: 200–250 g of fresh mushrooms per 1 kg of moist substrate over 2–3 harvests.

FAQ – Lion’s Mane

How long until the first harvest

Depending on your substrate and growing conditions: incubation takes about 10–14 days, followed by fruiting 1 to 2 weeks. Generally, allow 2 to 4 weeks in total.

What humidity level should you aim for?

Very high during the initiation phase (95–100%), then 85–95% during fruiting phase, with good ventilation to prevent condensation from forming directly on the mushroom.

Which substrate is the most reliable?

Pasteurized or sterilized enriched sawdust remains the most stable option. Straw can work, but yields more variable results.

Why does Lion’s Mane sometimes turn yellow?

This is often caused by direct water droplets, excessively dry air, or high CO₂ levels. Increase the flow of fresh air and mist the surrounding area rather than the mushroom itself.

I also have two more growing (one large and one small) using mycelium that I mixed with pellets grown in a bucket. I’m a beginner.

Thanks to the great tips on the site and after learning about its specific needs, I absolutely love growing this Lion's Mane. It really surprises me. As advised, I made a cross-shaped cut on the side of the block... however, it decided to grow straight up from the top... photo... and I'm waiting for its mane, which shouldn't be long now...
