Shimeji mushrooms are commonly eaten in Asia, though less so in Europe. They are starting to appear fresh at some markets. Shimeji mushrooms should not be eaten raw (like many mushrooms). They can be simply sautéed, retaining a nice crunchy texture with a slight anise flavor.
Growing tips: Unfold the plastic to create an air pocket above the substrate. Keep the plastic closed or leave a small opening for air. Wait for the primordia to develop (2 to 4 weeks). Open the plastic at the top and gradually lower it to allow the mushrooms to grow.
Storage of the mycelium: 1 month in the refrigerator.
