To grow your oyster mushrooms:

Pleurotus pulmonarius / Italian oyster mushroom

The Pleurotus pulmonarius, also known as the Italian oyster mushroom or summer oyster mushroom, is an easy-to-grow variety suitable for both beginners and more experienced growers.

Its mycelium is vigorous, colonizes the substrate quickly, and is particularly well-suited for cultivation in milder or warmer temperatures.

☀️ Key Benefit: It tolerates heat better than many oyster mushrooms. We selected this local strain of Pleurotus pulmonarius for its meaty texture and exceptionally delicious flavor.
Rapid growth, consistent and predictabl fruiting

This variety is often called the summer oyster mushroom because it tolerates high temperatures better than traditional gray oyster mushrooms. However, it can also be grown in winter, when the resulting mushrooms often keep longer and have a firmer texture.

The caps are generally between 3 and 7 cm in diameter, with colors ranging from light beige to light brown depending on growing conditions. The stems are often shorter than those of many Pleurotus ostreatus, and the mushrooms may grow in more open clusters.

❄️Storing the mycelium: Store in the refrigerator, ideally between 1 and 4°C.

For best results, use it within one month of receipt.

Our mycelia are organically produced and certified BE-BIO-01, Agriculture Belgique by Certisys.

🌱 Growing conditions

The oyster mushroom is particularly well-suited to mild to warm conditions. It can be grown year-round, but it becomes a particularly good option when temperatures are too high for certain varieties of gray oyster mushrooms.

The fruiting quickly. It is recommended to harvest them while they are still young, before the caps open too much, to ensure better texture and longer shelf life.

🛠️ Recommended growing media

For indoor growing

Use pasteurized straw, pasteurized wood shavings, or other lignocellulosic materials.

For a simple and consistent result, we recommend:

📊 Growing conditions

Inoculation: 5 to 10% grain mycelium relative to the weight of the moist substrate.

Phase Temperature Duration Humidity Light CO₂ Fresh air
Incubation 20–29°C 10–20 days, often faster on straw than on sawdust - - - -
Formation of primordial cells 10–20°C 3–5 days 95–100% 1,000–2,000 lux 500–800 ppm 5 to 10 cubic feet per hour
fruiting 10–30°C 3–8 days, depending on the temperature 85–95% 1,000–2,000 lux 500–800 ppm 5 to 10 cubic feet per hour

📚 Estimated data from *Growing Gourmet and Medicinal Mushrooms* by Paul Stamets. Results may vary depending on the strain, substrate, humidity, ventilation, and growing conditions.

📈 Productivity

On average, allow 150 to 250 grams of fresh mushrooms per kilogram of moist substrate, over 2 to 3 harvests, depending on the substrate and growing conditions.

FAQ – Oyster Mushroom

Why is it called the summer oyster mushroom?

Because Pleurotus pulmonarius tolerates high temperatures better than many other oyster mushroom species, it is particularly well-suited for spring, summer, or off-season cultivation.

What type of growing medium should I use?

Pasteurized straw works very well, as does pasteurized sawdust. Colonization often occurs more quickly on straw.

When should you harvest?

It’s best to pick mushrooms when they’re young, before the caps open up too much. They’ll have a better texture and keep longer.

Can it be grown in winter?

Yes. It can be grown year-round. In cooler conditions, growth may be slower, but the flavor and shelf life are often better.

What inoculation rate should be used?

We recommend using 5 to 10% grain mycelium relative to the weight of the moist substrate.
