King oyster mushrooms – Pleurotus eryngii
The eryngii mushroom, also known as the king oyster mushroom, royal oyster mushroom, or false porcini, is highly prized for its firm, dense, and low-water-content flesh.
Its thick stem resembles the texture of Bordeaux porcini mushrooms, with a mild, slightly nutty flavor. It is a gourmet variety, excellent when sautéed, grilled, roasted, or even served raw as a carpaccio.
Slightly more difficult to grow than oyster mushrooms, eryngii mushrooms require more stable conditions, particularly careful management of humidity, ventilation, and temperature during fruiting.
It is typically grown on a substrate made from enriched sawdust. Growing it on straw is possible, but yields are often lower unless the substrate is enriched and properly prepared.

Eryngii mushrooms prefer cool temperatures, around 15 to 18°C. They require high, consistent humidity at the start of fruiting, followed by slightly lower humidity as harvest time approaches.
Unlike traditional oyster mushrooms, eryngii generally require more precise growing conditions. Proper ventilation helps prevent deformation and results in better-shaped mushrooms.
Tip from La Mycosphère: To grow beautiful, thick stems, maintain a cool, humid environment at the start of fruiting, then avoid exposing the mushrooms to excessive direct moisture during growth.
