- Ingredients: sawdust, grains (including alfalfa), king oyster mushroom mycelium, lime. Net weight of the block: approx. 4.8 kg. Dimensions: 25 x 20 x 20 cm (L x W x H).
Slightly more difficult to grow than gray oyster mushrooms, eryngii mushrooms keep very well thanks to their firm, dense flesh and low water content. The stem has a texture similar to that of Bordeaux porcini mushrooms. They have a subtle almond flavor and can be served as carpaccio.
Eryngii mushrooms prefer cool temperatures ranging from 15 to 18°C. They require high, consistent humidity at the start of fruiting, which gradually decreases until harvest.

📋 Usage
Store the bundles in the refrigerator until ready to use (up to 2 weeks).
There are two types of fruiting
- Open the top of the bag, leaving 15–20 cm of plastic above the substrate; wait for the primordia (mushroom "buds") to appear, then gradually lower the plastic back down to the level of the substrate.
- Make a slit in the side of the bundle at the substrate level and squeeze the air out of the bag through this opening. Just like with oyster mushrooms, keep the substrate moist. This method takes a little longer and tends to yield slightly fewer mushrooms. However, it promotes the growth of the caps more than the stems, resulting in mushrooms with a slightly different taste and texture.

🏡 Where should you grow it?
Indoors (kitchen, garage, basement). King oyster mushrooms need a little light to grow. Opt for indirect sunlight, and avoid anything that might dry out the substrate: drafts, radiators, direct sunlight. King oyster mushrooms like humidity but don’t like being constantly soggy, as they are more susceptible to disease than oyster mushrooms.
⏰ How many harvests?
We usually get two harvests from this type of plant. The first harvest the most abundant.
💡 Tips
To encourage growth and productivity for a second harvest, you can:
- Rehydrate the bags by soaking them overnight in water, then drain them and return them to the growing area.
- Give it a cold shoc place the bundle in a cool place (such as the refrigerator or outdoors) for one night or longer. This simulates the onset of winter and encourages the fungus to reproduce.
📦 Storage
Eryngii mushrooms will keep for about two weeks in a paper bag in the refrigerator. For longer storage, you can also freeze them or preserve them in jars.
