White oyster mushroom – Pleurotus ostreatus
The white oyster mushroom is one of the easiest varieties to grow. Its mycelium is vigorous, adapts to a wide variety of substrates, and is generally resistant to contamination.
It can be grown indoors or outdoors, for example on straw, sawdust, logs, or mulch in the vegetable garden.
This variety produces large white caps, up to 15 to 20 cm in diameter, especially during the second harvest.
The white oyster mushroom is prized for its ease of cultivation, rapid growth, and high yield. When grown indoors, it requires good ventilation to prevent the stems from becoming too long and to encourage the caps to open.
🔍 Note: This variety is sometimes called or confused with the “elm oyster mushroom.” The true elm oyster mushroom is generally Hypsizygus ulmarius, a different species.
The variety offered here is a white Pleurotus ostreatus, which is generally easier to grow and more productive in indoor cultivation.

🌱 Growing conditions
White oyster mushrooms can be grown indoors year-round. They are fairly hardy, but they are particularly sensitive to CO₂ levels.
When growing indoors, good ventilation is necessary to keep the plants compact and encourage the growth of the flower heads.
Tip from La Mycosphère: If the stems grow long but the caps remain small, increase the supply of fresh air. This is often a sign of excess CO₂.
Outdoors, seeds should ideally be sown in early spring for a harvest summer or fall. In case of drought, it is important to keep the soil moist.

For indoor growing
Use pasteurized straw, pasteurized wood shavings, or other lignocellulosic materials.
For a simple and consistent result, we recommend:
- Organic straw pellets: Add about 1 teaspoon of lime and 2 liters of cold water per kilogram of pellets.
- Sawdust-based substrate: suitable for wood-eating species and very convenient for regular cultivation.
Outdoor cultivation
White oyster mushrooms can also be grown on logs, straw, or plant material rich in lignin and cellulose. The substrate must remain moist, especially during dry periods.
