Thanks to itsfirm, dense flesh and low water content, the eryngii mushroom keeps exceptionally well. The stem of this mushroom has a texture similar to that of Bordeaux ceps, and its flavor has a slight hint of almond. They can be enjoyed raw in carpaccio dishes.
Slightly more difficult to grow than oyster mushrooms, king oyster mushrooms are typically grown onsterilized sawdust. They can also be grown on straw, although yields are lower unless the substrate is enriched with sawdust and other supplements.

🌱 Growing conditions
Eryngii mushrooms prefer cool temperatures, between 15 and 18°C. They require high, consistent humidity at the start of fruiting, which should then be gradually reduced until harvest.
🛠️ Growing media
Eryngii mushrooms are typically grown on a substrate made from pasteurized or sterilized sawdust. An alternative is to use enriched, pasteurized straw.
