The pink oyster mushroom is a tropical variety native to Southeast Asia, prized for its striking color, rapid growth, and relatively easy cultivation.
It particularly thrives in warm conditions, with an ideal temperature of around 25–30°C. This makes it a very promising variety for summer crops in Europe.
The fruiting bodies range in color from light pink to dark pink, depending on growing conditions. To develop a rich color, the mushrooms need plenty of indirect light.
The caps are generally between 3 and 7 cm in fruiting very quickly: it is best to harvest the mushrooms while they are still young, when the edges of the caps are still slightly curled downward.
If harvested too late, pink oyster mushrooms become firmer and more fibrous. Their taste is similar to that of gray oyster mushrooms, with a slight bitterness.
