Lung oyster mushroom / Italian oyster mushroom – Pleurotus pulmonarius
The oyster mushroom, also known as the Italian oyster mushroom or summer oyster mushroom, is an easy-to-grow variety suitable for both beginners and more experienced growers.
Its mycelium is vigorous, colonizes the substrate quickly, and is particularly well-suited for cultivation in milder or warmer temperatures.
This variety is often called the summer oyster mushroom because it tolerates high temperatures better than traditional gray oyster mushrooms. However, it can also be grown in winter, when the resulting mushrooms often keep longer and have a firmer texture.
The caps are generally between 3 and 7 cm in diameter, with colors ranging from light beige to light brown depending on growing conditions. The stems are often shorter than those of many Pleurotus ostreatus, and the mushrooms may grow in more open clusters.

🌱 Growing conditions
The oyster mushroom is particularly well-suited to mild to warm conditions. It can be grown year-round, but it becomes a particularly good option when temperatures are too high for certain varieties of gray oyster mushrooms.
The fruiting quickly. It is recommended to harvest them while they are still young, before the caps open too much, to ensure better texture and longer shelf life.
Tip from La Mycosphère: During hot weather, pay special attention to humidity levels. Oyster mushrooms grow quickly, but their caps can dry out fast if the air is too dry or too drafty.

For indoor growing
Use pasteurized straw, pasteurized wood shavings, or other lignocellulosic materials.
For a simple and consistent result, we recommend:
- Organic straw pellets: Add about 1 teaspoon of lime and 2 liters of cold water per kilogram of pellets.
- Sawdust-based substrate: suitable for wood-eating species and very convenient for regular cultivation.
