Grifola frondosa, Polypore en touffe, Poule des bois

Maitake, Grifola frondosa, is not only a delicious edible mushroom but also an excellent medicinal mushroom that has been used for centuries in traditional Chinese and Japanese medicine.

The particularly sought-after active principles in maitake are the D-Fraction and MD-fraction, which are complex beta-glucans found in this mushroom. These components are especially studied for their immunostimulant, anti-tumor (1,2), anti-diabetic (3), and blood pressure-lowering properties (4).

It is typically cultivated indoors on sterilized, enriched sawdust substrates or outdoors on inoculated wooden logs. Its preferred woods are chestnut and oak.

Note that fruiting this mushroom is relatively more complex than most other cultivated mushrooms and is therefore more suited to experienced mycologists.

Growing Conditions

Maitake prefers cool temperatures of 10 to 15-18°C. They require high and consistent humidity at the beginning of fruiting, which gradually decreases until harvest.

Substrates

Indoor cultivation: pasteurized/sterilized enriched sawdust. We recommend our ready-to-use substrate, particularly suitable for lignivorous varieties.

Outdoor cultivation: Wooden logs (chestnut, oak) semi or fully buried.
