    • Variety eryngii, aka the "panaut oyster mushroom" or the "king oyster".

    A little more delicate to cultivate than gray oyster mushrooms, eryngiis have a very good shelf life thanks to their firm, dense flesh and their low water content. The foot is close to the texture of Bordeaux porcini mushrooms. Light almond flavor. They can be cooked as carpaccios.

    Eryngiis prefer cool temperatures of 15 to 18°C. They need constant high humidity at the start of fruiting, which gradually decreases until harvest.

    📋 Utilization

    Store the balls in the fridge before using them (max 2 weeks).

    There are two modes of fruiting:

    • Open the top of the bag, leaving 15-20 cm of plastic above the substrate, wait for the primordia ("mushroom buds") to appear, then gradually lower the plastic to the level of the substrate.
    • Make a cut in the side of the bale at the substrate level and expel the air from the bag through this opening. In the same way as oyster mushrooms, keep moist. This technique takes a little more time, and tends to produce a little less. But this encourages the development of the caps more than the stems, which results in mushrooms that are a little different in taste and texture.

    🏡 Where to grow it?

    Inside (kitchen, garage, cellar). Eryngiis need a little light to grow. Prefer indirect sunlight, avoid anything that could dry out the bundle: draft, radiator, sun. Eryngiis like humidity but do not like to be constantly soaked because they are more susceptible to disease than oyster mushrooms.

    ⏰ How many harvests?

    We generally make 2 harvests on this type of bale. The first harvest is the most abundant.

    💡 Tips

    To encourage the growth and productivity of a second harvest, you can:

    • Remoisten the bags by immersing them overnight in water before draining them and returning them to culture.
    • Do a thermal shock: place the bundle in a cool place for one night or more (fridge or outside). This simulates the arrival of winter and encourages the fungus to reproduce.

    📦 Conservation

    Eryngiis will keep for around 2 weeks in a paper bag in the fridge. For longer storage, you can also freeze them or put them in jars.

    fantastique, cela pousse magnifiquement bien, mais une erreur d'étiquetage d'un ballot!

    un ballot que mon fils m'a offert est étiqueté Eryngii Bio et s'avère être un ballot de pleurotes bleues à moins qu'il ne s'agisse de le même chose ce que je ne pense pas.
