Eryngii, oyster mushroom, false porcini mushroom, royal oyster mushroom, king oyster

Thanks to its firm and dense flesh and its low water content, the eryngii offers excellent preservation. The base of this mushroom recalls the texture of Bordeaux porcini mushrooms and its flavor is slightly almondy. They can be enjoyed raw in carpaccios.

A little trickier to grow than gray oyster mushrooms, eryngiis are generally grown on sterilized sawdust. They can also be grown on straw, although yields are lower, unless the substrate is enriched with sawdust and other supplements.

🌱 Growing conditions

Eryngiis prefer cool temperatures, between 15 and 18°C. They require constant high humidity at the start of fruiting, which must then be reduced gradually until harvest.

🛠️ Substrates

Eryngiis are generally grown on a substrate based on pasteurized or sterilized sawdust. An alternative is to use enriched and pasteurized straw.

We recommend our ready-to-use substrate , particularly suitable for wood-eating varieties.
