Black Pearl Oyster Mushroom, Black Oysters, Black Kings, Shimofuri Hiratake
A kind of UFO in mushroom cultivation, this variety appeared a few years ago in Japan and quickly gained popularity in North America. Resulting from a cross between a European variety and a Japanese variety, Black Pearl offers an excellent compromise between king oysters and oyster mushrooms.
They have a stem wider than that of oyster mushrooms, but less dense than that of king oysters. Their rounded caps resemble king oysters, with a color ranging from light brown to dark brown striped depending on maturity and growing conditions. They grow in clusters and are easier to cultivate than king oysters.
A variety belonging to the Pleurotus ostreatus family, Black Pearl offers a delicious flavor, close to that of oyster mushrooms with a more pronounced umami note. They are also very productive.

Black Pearl is generally grown on pasteurized wood sawdust or enriched and pasteurized straw.
