A brief tour of oyster mushroom production at the end of 2020. We grow around ten different varieties of oyster mushrooms. We distinguish them in particular by their colored shades: gray, blue, yellow, white, beige, pink, brown.
Some varieties of oyster mushrooms are more adapted to warm temperatures like yellow or pink oyster mushrooms. In winter we mainly grow gray oyster mushrooms: the oyster-shaped oyster mushroom.
We sometimes harvest oyster mushrooms native to the region. After selection work in the laboratory, we test them in culture and we examine different parameters such as the duration of incubation and fruiting, the quality of the harvests obtained, the number of harvests per bundle, resistance to diseases, etc. Depending on these different factors, we select the varieties most suited to our production method.
