A quick look at oyster mushroom production at the end of 2020. We cultivate about ten different varieties of oyster mushrooms. We distinguish them notably by their color shades: gray, blue, yellow, white, beige, pink, brown.
Some oyster mushroom varieties are better suited to warm temperatures, such as yellow or pink oyster mushrooms. In winter, we mainly cultivate gray oyster mushrooms: the oyster-shaped pleurotus.
We sometimes harvest native oyster mushrooms from the region. After a selection process in the laboratory, we test them in cultivation and examine various parameters such as incubation and fruiting duration, the quality of the harvests obtained, the number of harvests per bag, disease resistance, etc. Based on these different factors, we select the varieties best suited to our production method.
