- Eryngii variety, also known as the "panicaut oyster mushroom" or the "king oyster".
- Grow Kit Fruiting Block ready to grow.
- Harvest: between 0.75 and 1 kg of fresh mushrooms over 2-3 harvests.
- Composition: wood shavings, cereals, eryngii mycelium. Net weight of the Grow Kit Fruiting Block: +-5 kg. Dimensions: 25 x 20 x 20 cm (L x W x H).
A bit more delicate to cultivate than grey oyster mushrooms, eryngiis have very good preservation thanks to their firm and dense flesh, and their low water content. The stem resembles the texture of Bordeaux cep mushrooms. Light almond flavor. They can be cooked as carpaccios.
Eryngiis prefer cool temperatures of 15 to 18°C. They need high and constant humidity at the beginning of fruiting, which gradually decreases until harvest.

📋 Usage
Store the Grow Kit Fruiting Blocks in the fridge before use (max 2 weeks).
There are two fruiting modes:
- Open the top of the bag leaving 15-20 cm of plastic above the substrate, wait for the appearance of primordia ("mushroom buds"), then gradually lower the plastic back down to the substrate level.
- Make a cut on the side of the Grow Kit Fruiting Block at the substrate level and push the air out of the bag through this opening. Like oyster mushrooms, keep moist. This technique takes a bit more time and tends to produce a little less. But it favors the development of caps more than stems, resulting in mushrooms with a slightly different taste and texture.
🏡 Where to grow it?
Indoors (kitchen, garage, cellar). Eryngiis need some light to grow. Prefer indirect sunlight, avoid anything that could dry out the Grow Kit Fruiting Block: drafts, heaters, direct sun. Eryngiis like humidity but do not like to be constantly soaked as they are more sensitive to diseases than oyster mushrooms.
⏰ How many harvests?
We usually get 2 harvests from this type of Grow Kit Fruiting Block. The first harvest is the most abundant.
💡 Tips
To encourage the growth and productivity of a second harvest, you can:
- Rehydrate the bags by soaking them overnight in water before draining and putting them back into cultivation.
- Apply a cold shock: place the Grow Kit Fruiting Block in a cool place (fridge or outside) overnight or longer. This simulates the arrival of winter and encourages the mushroom to reproduce.
📦 Storage
Eryngiis can be stored for about 2 weeks in a paper bag in the fridge. For longer storage, you can also freeze them or put them in jars.
