Eryngii, sea holly oyster mushroom, false cep, king oyster mushroom, king oyster

Thanks to its firm and dense flesh and low water content, the eryngii offers excellent preservation. The stem of this mushroom resembles the texture of Bordeaux cep mushrooms and its flavor is slightly almond-like. They can be enjoyed raw in carpaccios.

A bit more delicate to cultivate than grey oyster mushrooms, eryngiis are generally grown on sterilized wood sawdust. They can also be grown on straw, although yields are lower unless the substrate is enriched with sawdust and other supplements.

🌱 Growing conditions

Eryngis prefer cool temperatures, between 15 and 18°C. They require high and constant humidity at the beginning of fruiting, which must then be gradually reduced until harvest.

🛠️ Substrates

Eryngis are generally cultivated on a substrate based on pasteurized or sterilized wood sawdust. An alternative is to use enriched and pasteurized straw.

We recommend our ready-to-use substrate, particularly suited for lignicolous varieties.
