The variety: Pioppino

Characteristics of culture substrates:
- Harvest: Between 0.7 and 1 kg of fresh mushrooms over 2-3 harvests.
- Composition: Water, wood shavings, cereals, lime, mycelium. Net weight of the bale: +-5.2 kg.

The Pioppino is an excellent edible mushroom with a crunchy texture and a slightly sweet taste reminiscent of hazelnut. The caps (3-5 cm) are dark brown at first, lightening in a gradient to beige-cream as they mature. The stems remain crunchy when cooked if they are picked young.

Use
If you cannot use the ballot immediately, keep it in the fridge for about 2 weeks.
This variety enjoys warmth (20-27°C) but can also be grown at cooler temperatures down to 12°C. Harvest the mushrooms young, just before the caps open, for better preservation and a more tender texture. Be careful, the growth of the mushrooms is very rapid.
There are two methods of fruiting:
- Open the top of the bag, leaving 15-20 cm of plastic above the substrate, wait for the appearance of primordia (mushroom buds), then gradually lower the plastic to the level of the substrate.
- Make a cut on the side of the bale at the substrate level and expel the air from the bag through this opening. This technique takes a little more time and tends to produce a little less, but it promotes the development of caps more than stems, resulting in mushrooms that are slightly different in taste and texture.
Maintain a humidity of 80 to 90% during mushroom growth. Use our minispray or our professional misting devices to maintain optimal humidity.

Where to cultivate it?
Grow indoors (kitchen, garage, cellar). Pioppinos need a little light to grow. Prefer indirect sunlight and avoid anything that could dry out the block: drafts, radiators, direct sunlight. Pioppinos like humidity but do not like to be constantly soaked.
Tips
To encourage growth and productivity of second and third crops:
- Remoisten the bags by immersing them overnight in water, then drain them and return them to culture.
- Give a thermal shock by placing the bundle in a cool place overnight (fridge or outside). This simulates the arrival of winter and encourages mushroom reproduction.
