Eryngii, oyster mushroom, false porcini mushroom, royal oyster mushroom, king oyster
Very good preservation thanks to its firm and dense flesh, and its low water content. The foot is close to the texture of Bordeaux porcini mushrooms. Light almond flavor. They can be cooked as carpaccios.
A little trickier to grow than gray oyster mushrooms, eryngiis are generally grown on sterilized sawdust. They can also be grown on straw with lower yields, unless enriched with sawdust and other supplements.

Growing conditions
Eryngiis prefer cool temperatures of 15 to 18°. They need constant high humidity at the beginning of fruiting, which gradually decreases until harvest.
Substrates
Eryngiis are generally produced on a substrate made from pasteurized or sterilized sawdust. Enriched and pasteurized straw can be an alternative.
We recommend our ready-to-use substrate , particularly suitable for wood-eating varieties.
