The variety
Lion's Mane (Hericium Erinaceum)
Very interesting mushrooms, both culinary and therapeutic. Various studies confirm the presence in hedgehog hydnes of two phenolic components (erinacins and hericenone) which promote the regeneration of neurons. Particularly at the level of the hippocampus which manages memory functions. It is therefore used in the prevention and treatment of Alzheimer’s (1). Other components (five kinds of saponins) have a beneficial effect on the treatment of stomach ulcers and inflammation of the digestive tract.

Lion's Mane can grow all year round in temperatures ranging from 10 to 25°. For fruiting, avoid drafts and temperature variations; they like high humidity but cannot tolerate being wet.
Our advice if you don't have growing space: place a transparent plastic bag perforated with small holes, above the bundle. Remove the plastic twice a day to renew the air to ventilate the bundle.

Use
Start by pushing the air out of the bag, if necessary making a small cut in the top of the bag. Fold the plastic on its side and to hold it you can tape it, or lay it on this side.
Then make two cross cuts of 5 cm on each side of the bale. The substrate must remain moist. If necessary, moisten with a spray at the opening. Primordia appear after 1 to 2 weeks, and take 1 to 2 weeks to develop. The mushrooms are ready to be harvested when the hydnes (stingers) are +- 5mm. If the mushrooms turn yellow before this stage, it is usually because they have been stressed by drafts or temperature variations. It is then better to harvest them at that time and wait for the next harvest.

Where to cultivate it?
Inside (kitchen, garage, cellar). The lion's mane appreciates indirect sunlight. Avoid anything that risks drying out the bundle: draft, radiator, sun.
Harvesting and conservation
You can make 3 to 4 harvests on this type of bale. To harvest, gently tear off the bouquet by turning it on itself. Remove any pieces of stems remaining on the bale to prevent them from rotting and harming subsequent harvests. After a few days of rest, immerse the bundle overnight in water, drain it and wait for the next harvest.
You can keep them for around 5 days in a paper bag in the fridge. For longer storage you can also dry them and reduce them to powder.
