The Enoki mushroom is distinguished by its mild, subtly sweet flavor and unique crunchy texture. It has a slight umami note that enhances dishes without overpowering them. Fresh Enoki offers a slightly earthy taste, making it a great addition to various culinary preparations such as soups, salads, and stir-fries.
Some studies suggest that Enoki mushrooms also have antioxidant properties and support the immune system. They may have anticancer potential and contribute to cardiovascular health by reducing cholesterol and improving blood circulation.
The variety we offer here is Golden Enoki. This is a native strain from our regions, which naturally fruits in the coldest months, from November to March.

How to Inoculate Logs with Mycelium on Wooden Dowels?
Necessary Equipment
- Log or recently cut wood block (max 3 months). Avoid softwoods. Most hardwoods are suitable. Contact us for more specific information. Log diameter: between 10 and 25 cm. Length: between 50 and 150 cm.
- Mycelium on dowels: For a 1m length, multiply the log's diameter by 2.5. Example: a 1m log with a 20cm diameter: 20x2.5=50 dowels.
- Drill and 8-9mm bit.
- Hammer.
- Optional: soy wax / beeswax / paraffin / green clay to cover the holes.
Instructions
- Wash your hands before handling the mycelium to maximize the chances of success.
- Drill holes in your log. The holes should be slightly deeper than the height of the dowel. Space the holes about 5 cm apart. A 1m long log requires about 50 dowels.
- Insert the dowels into the holes using a hammer. The dowels should not protrude from the holes.
- Cover with wax. The wax protects the mycelium from insects and diseases and prevents drying out. If unavailable, you can also use paraffin, cheese wax, or green clay.
- Be patient: Place your logs in a shaded area sheltered from the wind. Avoid direct contact with the ground to prevent insect infestations and contamination. You can place them on a pallet covered with a tarp. In hot weather, occasionally pour a watering can of water over the logs to keep them from drying out.
- Harvest and enjoy your production. A properly prepared log can produce mushrooms for 3 to 5 years.

Notes
The optimal periods for inoculating logs are autumn, winter, and early spring, before the sap rises.
The main enemy of this cultivation is dryness: cover the logs with a tarp or veil if necessary to maintain humidity, especially during incubation.
We prepare our bags by weight, so there may be slight variations in the indicated number of dowels.
We inoculate the dowels with a mixture of grains and sawdust. It is normal to have some sawdust mixed with the dowels. This remaining sawdust can also be used as inoculum.
