- Variety eryngii, also known as the "sea holly oyster mushroom" or the "king oyster".
- Grow Kit Fruiting Block ready to grow.
- Harvest: between 0.75 and 1 kg of fresh mushrooms over 2-3 harvests.
- Composition: wood shavings, grains, eryngii mycelium. Net weight of the block: approximately 5 kg. Dimensions: 25 x 20 x 20 cm (L x W x H).
A bit more delicate to cultivate than grey oyster mushrooms, eryngiis keep very well thanks to their firm and dense flesh, and their low water content. The stem resembles the texture of ceps from Bordeaux. Light almond flavour. They can be prepared as carpaccios.
Eryngiis prefer cool temperatures of 15 to 18°C. They need high and steady humidity at the start of fruiting, which gradually decreases until harvest.

📋 Use
Keep the blocks in the fridge before use (max 2 weeks).
There are two fruiting methods:
- Open the top of the bag leaving 15-20 cm of plastic above the substrate, wait for the primordia ("mushroom buds") to appear, then gradually lower the plastic down to the substrate level.
- Make a cut on the side of the block at substrate level and push the air out of the bag through this opening. As with oyster mushrooms, keep moist. This method takes a little longer and tends to produce a bit less. But it encourages the development of caps more than stems, giving mushrooms with a slightly different taste and texture.

🏡 Where to grow it?
Indoors (kitchen, garage, cellar). Eryngiis need some light to grow. Prefer indirect sunlight, avoid anything that could dry out the block: drafts, heaters, direct sun. Eryngiis like humidity but do not like to be soaked constantly as they are more sensitive to diseases than oyster mushrooms.
⏰ How many harvests?
We usually get 2 harvests from this type of block. The first harvest is the most abundant.
💡 Tips
To encourage growth and productivity of a second harvest, you can:
- Re-moisten the bags by soaking them overnight in water before draining and returning them to cultivation.
- Give a cold shock: place the block in a cool place overnight or longer (fridge or outside). This simulates the arrival of winter and encourages the mushroom to reproduce.
📦 Storage
Eryngiis keep about 2 weeks in a paper bag in the fridge. For longer storage, you can also freeze them or preserve them in jars.
