The variety: White Shimeji

Characteristics of the growing substrates:
- Harvest: Up to 1 kg of fresh mushrooms over 3 harvests.
- Composition: Water, wood sawdust, cereals, lime, mycelium. Net weight of the block: +-5 kg. Dimensions: 25 x 20 x 20 cm.
Shimejis are commonly consumed in Asia, less frequently in Europe. They are starting to be found fresh in some markets. Shimejis should not be eaten raw (like many mushrooms). They can be simply sautéed, retaining a good crunchy texture with a slight anise flavor.
Growing tips: unfold the plastic to create an air pocket above the substrate. Keep the plastic closed or with a slight air opening. Wait for the primordia to develop (2 to 4 weeks). Open the plastic on top and gradually lower the plastic to make room for the mushrooms to grow.
Mycelium storage: 1 month in the fridge.
