    The maïtaké (Grifola frondosa), also known as "Tufted Polypore" or "Hen of the Woods", is an edible mushroom appreciated not only for its delicate flavor, but also for its medicinal properties. recognized.     🌱 Maitake Cultivation

    Maitake cultivation can be done indoors, on substrates based on enriched and sterilized sawdust, or outdoors, on inoculated wooden logs with dowels. This fungus prefers wood species such as chestnut and oak, which provide the nutrients necessary for its development.

    It is important to note that the fruiting of maitake is relatively complex, which makes its cultivation more suitable for experienced myciculturists. Temperature and humidity conditions must be carefully controlled for successful cultivation of this delicate mushroom.

    🔬 Utilization

    Maïtake prefer cool temperatures, between 10 and 18°C. During early fruiting, consistent high humidity is essential to encourage growth. As the mushrooms grow, humidity can be gradually reduced until harvest.

    It is also possible to grow maitake outdoors. At the beginning of spring (March-April), dig a trench the size of the bales and cover them with 2 to 3 cm of earth. Keep the area slightly moist for the following weeks and months to encourage fruiting.

    🌾 Harvest and Conservation

    Generally, only one harvest is carried out on this type of bale. After harvest, you can try to obtain a second harvest by burying the bundle in the vegetable garden, leaving 2 to 3 cm of soil above. This method could allow for a small additional harvest early the following summer.

    Maïtake will keep for around 1 to 2 weeks in a paper bag in the refrigerator. For longer storage, they can be dried. Drying not only extends their shelf life, but also concentrates their active ingredients, making their use even more beneficial for health.
